OMELETTE WITH HAM AND MILD PROVOLONE VALPADANA PDO

INGREDIENTS

Topping:

  • 8 eggs
  • 100 g cooked ham
  • 150 g mild Provolone Valpadana DOP
  • 50 g Provolone Valpadana DOP spicy
  • 40 g butter
  • 1 bunch chives
  • salt to taste
  • pepper to taste

PREPARATION

In a large bowl, shell the eggs, add a pinch of salt, a grinding of pepper, grated spicy Provolone Valpadana DOP, and chopped chives. Using a whisk, whisk the ingredients until they are blended into a single mixture. In a nonstick skillet melt a knob of butter, and pour in half of the egg mixture. Let it cook for about 4 minutes over medium heat; when a crust begins to form, add half of the mild Provolone Valpadana PDO and half of the cooked ham. With the help of a spatula and trying not to break it, fold the omelet in half on itself. Repeat the same operation with the remaining ingredients.

When you have the two omelets ready divide them in half to have 4 servings.
