Wholemeal pizza with Provolone Valpadana PDO mild, roasted ham and mushrooms

INGREDIENTS

Mix:

  • 250 g of wholemeal flour
  • 250 g of type 1 flour
  • 4 g of dry yeast
  • 310 g of water at room temperature
  • 30 g of extra virgin olive oil
  • 10 g of fine salt
  • 1 spoon of honey

Topping:

  • 200 g of Provolone Valpadana PDO mild in slices
  • 400 ml of tomato puree
  • 300 g of mushrooms
  • 150 g of roast ham
  • 1 clove of garlic
  • 2 sprigs of parsley
  • Extra virgin olive oil
  • Salt and pepper

PREPARATION

  1. Take a bowl and pour the wholemeal flour, dry yeast and honey into it.
  2. Mix everything with a wooden spoon, pouring the water slowly, until we have a liquid and uniform mixture.
  3. Then cover the bowl with cling film, put it in the turned off oven and let the dough rise for an hour.
  4. Remove the dough and add the remaining flour. Work with your hands until this is completely absorbed by the dough. At the end, add the salt and oil.
  5. Bring the dough to the work surface and knead it for about 10 minutes. At the end, let it rise for another two hours.
  6. Clean the mushrooms and cut them into slices, then put them in a pan with 3 tablespoons of extra virgin olive oil, a peeled clove of garlic and a sprig of parsley. The mushrooms are cooked for 30 minutes over low heat with the lid on the pan, stirring occasionally. Season with salt and pepper.
  7. Once the mushrooms are cooked, keep them warm to one side.
  8. Then roll out the dough into two round pizzas of 28 cm in diameter and put them inside two pans greased with oil. Pour over the tomato puree and add a drizzle of oil.
  9. Bake the pizzas at 220° for 15 minutes.
  10. Remove the pizzas from the oven and add the slices of Provolone Valpadana PDO mild. Put them back in the oven for another 5 minutes.
  11. Once the pizzas are taken out of the oven, add the roasted ham and mushrooms, seasoning with a drizzle of oil.
