Winter brings with it a craving for comfort food, hearty and cosy dishes that refresh the body and pamper the mind.

“CHOOSE YOUR TASTE, SWEET OR SPICY, ONLY FROM EUROPE”, comes to your aid with new recipes dedicated to the winter season; one recipe a day to spend the whole week in the company of Provolone Valpadana PDO, a versatile cheese, in its sweet and spicy variations, and that goes well with many ingredients and vegetables typical of this season.

Among the Chef’s first appetisers, a tasty starter rich in sensory nuances: Boiled cauliflower with sweet Provolone Valpadana DOP salted zabaglione and poppy seeds.

For first courses, we range from Spaghetto with cream of broccoli, tarallo bread crumbs and spicy Provolone Valpadana DOP, a tasty pasta with a creamy, stringy note, to a great classic of Italian cuisine: Risotto with red beetroot and sweet Provolone Valpadana DOP fondue, rich, delicious and scenic, a “must try” that should not be missing from tables. For those instead looking for a real seasonal comfort-food, the project proposes a fragrant Vellutata di broccoli e patate con crema di Provolone Valpadana DOP dolce, semi e castagne, a thick and delicious cream perfect for cuddling up during the cold winter evenings.

For meat lovers and fearless cooks, main courses include a tantalizing Roast Pork Fillet, Jerusalem artichoke cream, melted sweet Provolone Valpadana PDO and pan-fried turnip greens, a real delicacy. And again, Pan-cooked egg with mashed turnip tops and spicy Provolone Valpadana PDO, an easy and delicious vegetarian main course. For those who, on the other hand, want to impress with fresh, light notes without going crazy in the kitchen: Fennel salad, marinated salmon and blood orange with spicy Provolone Valpadana DOP, an easy-to-make dish that fully enhances the strong, intense flavour typical of the spicy version of this cheese.
