During the launch dinner of the project ‘Choose your taste, sweet or spicy, only from Europe’, the ‘numbers’ of the Consorzio Tutela Provolone Valpadana were presented, a success story of continuous growth, in quantity and quality.
Today, the Consortium associates 11 producer dairies. for a total of about 700 farms authorised to confer milk: in 2020, more than 70,000 tonnes of milk conferred for a total of about 7,300 tonnes of Provolone Valpadana and more than 5,200 tonnes of Provolone Valpadana marketed – as at 31/10/2021, an increase of 3% compared to the previous year.

The Consortium monitors the various stages of the life of Provolone Valpadana D.O.P. and does so in a very rigorous manner, specifically commissioned by the Ministry of Agricultural, Food and Forestry Policies. But it does more than just supervise: with an eye to the future and to market development, it offers technical-scientific assistance to improve production technologies, helping to improve the product’s guarantee from both a health and organoleptic point of view. In practice: the Consortium is a shield that protects all players in the chain from any kind of unfair competition. While for consumers it is a guarantee that defends against fraud, counterfeiting and related damages.

In addition to protection activities, the Consortium carries out information and research to promote the consumption and knowledge of Provolone Valpadana and supports various activities related to environmental, economic and social sustainability. Research has been conducted on innovative molecular methodologies and experimental cheesemaking. This research has made a significant contribution to reducing the negative externalities generated by production companies and has raised the technological level of producers, thus ensuring sustainability from an economic point of view, improving the quality of the cheese and gradually abandoning the use of preservatives.
